Kusaki, Japanese vegan restaurant in Brighton, is causing quite a buzz! I was lucky enough

to visit with my boyfriend last weekend. As this came recommended to us, we knew the standard would be high, but like anything - one man's steak, is another man's poison - (especially if you're a herbivore) We kept an open mind, but left very satisfied.

It was the whole experience that made the evening. The way we were greeted, the free cocktails we were offered (for the shortest wait to be seated), the decor, ambiance and of course the food itself.

Japanese food has always been a favourite! And these dishes didn't disappoint. So many inviting choices, but we opted for - Kusaki curry; Hoisin zucchini bao buns; shiitake, leek and tofu gyozas; Kyuri No Sunomono and for dessert - Wanton Mille Feuille and Cherry Chocolate Mousse. An explosion of aromas, intense flavours and textures to please the palate. I can still taste the Kusaki curry, with it's rich, flavoursome sauce and crispy coated sweet potato & oyster mushrooms. And after, the light wanton pastry with coconut cream that bought back memories of meringue - back in the (dreaded) days of dairy. That same delicate creamy centre, just enough flavour. Not too dense!

I could revisit this marvellous restaurant again and again. There's really no excuse for poorly prepared, unimaginative vegan food. Whole, fresh foods have always been the best! Nothing preserved, no GMOs, just simpl, fresh and organic - with a little innovation to create dishes that excite, inspire and fulfil.

This was truly delicious Japanese food, at its' finest. 🌱
