King Trumpet Ceviche

This picture does not do justice to how beautiful this dish was. I was quite curious how someone would make vegan #ceviche, but I was pleasantly surprised. The mushrooms were tender with the citrus taste you expect from ceviche, and the beet slaw worked surprisingly well. #veganseafood
