This was delicious! I'm so thrilled that I live in the area and have a 100% vegan place where I don't have to worry about sneaky animal products in the food. This came out very hot and fresh. The flavors were wonderful. All the veggies were cooked perfectly! This is my new favorite restaurant eggplant dish. I'm so glad it's on their lunch special menu!
