Houtou (ほうとう) is a speciality of Yamanashi Prefecture, the broth has mostly a pumpkin taste

to it. The noodles are very thick, thicker than udon but at this particular branch which is famous for houtou, the noodles were of excellent quality compared to other places I’ve tried. I’m almost certain that the broth is inherently vegan anyway and they may just put some meat on top but just in case, I asked for the vegetarian version and she said that it’ll be made out of konbu, which is kelp🤔 (dammit language barrier). It comes in this huge cauldron-like bowl that is very very hot. The portion is massive so beware of that.
