Gluten-free apple cinnamon pancakes

Not usually a fan of gluten free, but was not an issue with this dish. Had a nutty texture and some small apple pieces throughout. Very tasty and filling, wouldn't mind some whipped cream topping but am probably better off without it, anyway...
