Quinoa enchiladas with some black beans. The cilantro was in the side and of
course I added it. When I returned to my office I also added some vegan sour cream I had on hand. I really enjoyed these. The taste was good. They admitted they were still working on the enchilada shells/tortillas. It was more of holding them together because they tasted fine.
