Enmoladas de chorizo de quinoa y plátano macho

This looks really awful and grotesque, but I can assure you these mole enchiladas filled with quinoa “chorizo” were amazing! They’re topped with vegan cream, onions, fried plantain and with a side of black beans. Just delicious and creative!
