It's been a while since I've had a cake with so much cream, but I
was tempted by the raspberry and pistachio pairing. The cake itself is a vanilla sponge with a layer of pistachio cream in the middle then a raspberry layer at the top. I thought the sponge was pretty nice and light though my sister commented on a slight baking soda taste. I wish the pistachio taste was stronger but overall it is a nice and light tea time kind of cake. The cream in particular was very airy and wasn't too heavy which was great.
