Perfection, a homemade cassava corn pocket wrapped inside a banana leaf, filled with seitan pork,
vegan ricotta, salad greens, tomato and avocado. A tasty combination of chewy, creamy, rich with just enough acidity from tomato. So much more creative and satisfying than a burger!
Cassava fries were cut too big for my taste and dry. A green pesto (maybe it was moringa) replaced ketchup.
A side salad with a mild vinaigrette completed the plate.
Being in the jungle, the first time I went was at night and mosquitos were a bother.
The second time for a late lunch flies and ants liked my skin too much.
