浓香茄子 - Fragrant Eggplant

This is one creative dish 😀 Large cuts of #aubergine mixed in with #foragerbeans and #youtiao, dressed in #sataysauce and topped with #peanut shavings. It didn't seem to really gel as a combination, but each of the items was flavourful and tasty in its own right 🙂 The plating wasn't flattering, admittedly

It never occurred to me that you could use #sataysauce as a stand-in for what is usually a buttery — think butter prawns, kind of flavour 🦐 I’m definitely stealing this! Eggplant, wing beans, and creatively #youtiao / #doughsticks all present; Such an amazing mix!
