This was the 4th dish in SHU’s 10-course vegan degustation set.
Have you ever seen a meal served in a bird’s nest bowl let alone a ceramic egg??! The visuals of this was so unique! The Chinese doughnut was a a slightly sweet, fermented dough ball that has been sliced twice, and had the same consistency and sponginess as crispy pizza dough.
The eggplant was served warm and just melted in your mouth. The sweetness of eggplant, chilli, and spring onion went hand-in-hand when placed on top of the sweet doughnut slices.
Your spoon can just fit inside the ceramic broken egg to scoop up that eggplant goodness. Incredible.
