This was the second course in the 10-course 100% vegan degustation set.
Inside the little ‘pot’ of daikon, there was raw snake bean, broccolini florets, carrot sticks, beetroot, cucumber, and mesclun lettuce leaves. The tahini ‘soil’ was a mixture of roughly ground white and black sesame seeds, very salty soy sauce, and ginger. Everything was wrapped in two long, thin ribbons of raw daikon radish, and everything tasted great smothered in the tahini soil. Very inventive and original! I can’t imagine the patience and skill of the chef to set up this tower of vegetables without it falling!
