🇰🇷 I’m a huuuuuuge fan of #bibimbap since discovering it when I lived in Japan. Now at this new #korean chain around the corner there’s this very nutritious one filled with🍚🫛🍄🟫🥬🥕 #rice #edamame #chickpeas #mushroom #cabbage #carrot #courgettes #kimchi and #redpepper. There’s a #gochujang #sesameoil sauce on the side you add to make it as #spicy 🌶️as you like. I always chuck the whole sauce in but this one was quite mild. This dish alone is full of #protein and 🌱vegan on the menu. However I wanted to add the fried soft #tofu which comes with a honey garlic 🧄soy glaze. I asked them to remove the honey glaze to make the tofu vegan as well then. I’m super impressed with the range of protein and veg in this. This one was lukewarm for some reason which wasn’t ideal but the place was mobbed with customers. It’s an extra £3.50 to add the tofu but maybe you don’t need it. The base dish is £11.90 which maybe I’ll resort to in future. I’ve never seen edamame or chickpeas in a bibimbap so it’s cool. This will probably become my new local go to bibimbap. The best part of bibimbap is normally the sizzling hot stone bowl it’s served in that continues to cook everything and makes the rice get crispy crunchy. Sadly they don’t do that here.
