Chef Vinay’s come up with a very interesting watermelon seed based cheese for this cheesecake. Love the texture!!!

I’ve never tasted non-vegan cheesecakes, so I don’t have a point of comparison. But I think this vegan cheesecake tastes very much like what I’d imagined other cheesecakes to taste like. Except better! ☺️

The watermelon seed cheese isn’t like other nut based vegan cheesecake fillings. This one has a mild cheesy taste, a certain depth of flavour. So interesting!
