A year since our trip to Costa Rica has passed, but our taste for vegan ceviche has remained. I've had a lot of heart of palm ceviche, but never coconut ceviche! The ceviche itself didn't have much of a strong flavor, but it's served in a pool of queso which was really yummy! There are also little drops of hot sauce that give it some nice heat.
