I picked up these frozen tofu sheets at Trader Joe's, and since they’re already frozen, I didn’t even have to bother with rehydrating—super quick and easy!
When I first saw them, I thought they'd be great marinated to make lox because of their texture. But once I cooked them, they ended up reminding me of chicken way more than anything else.
So, I decided to change gears and use them to make chicken soup instead. I chopped them into chunks, tossed them with some onions, garlic, celery, and carrots, and added a little thyme, salt, and pepper. Then I poured in some veggie broth and noodles, and voila! We had a quick and easy vegan chicken soup perfect on a chilly night.🍲
