Delicious and healthy take on traditional Teochew-style fish soup! The housemade miso-based broth brewed with tomato was super slurp-worthy, paired with chewy nama udon noodles, yam, cabbage, and silken tofu. 🍜🍅🍠🥬 I loved that instead of the typical mock meat (i.e. textured soy protein 'fish'), they made their own whole-food plant-based version using air-fried enoki mushrooms wrapped in seaweed and rice paper!
