These tender strips of #eggplant coated with #gofio (toasted corn flour) and drizzled with #palmhoney are a staple in the Canary Islands. Here they were accompanied by #melon cubes to provide a sweet contrast. The eggplant was so tender and the palm honey generously poured. We sat outside with a host of local folks to enjoy the view of Hermigua valley and the numerous banana plantations surrounding the town. The generous starter was plenty for two and priced at 8,50€.
The staff was so friendly and attentive and there were tables filled with locals - always a good sign. Everyone was out on the terrace to enjoy the warmth and stunning views of the Hermigua valley. The village is charming and simply magical!
