I've really grown to love pepitas. This salsa ended up being one of my favorites! The pepitas provide a nice earthier flavor. It also almost has a meaty texture. There is a perfect spice level for this. The slight burn is very pleasant, but you can eat a lot of it. This is so great with tortilla chips, but I also really loved it on a breakfast burrito! @jonok made tofu scramble with bell peppers. We added Violife Mexican shreds and Nuanced Hot Sauce for a wonderful breakfast!
