These consisted of moist pepparkakor spice cake with apple butter filling and vanilla cream frosting. The larger Pioneering Princess Cake, which is a special for Veganizer PDX’s World Vegan Month Celebration was sold out, but these cupcakes had the same lively, warming fall flavors from cloves, cinnamon, ginger, and cardamom. A portion of the proceeds will be donated to Guide Dogs for the Blind, which helps raise dogs that lead blind and visually impaired people throughout their daily lives and help connect them with the community. Moby, Carina’s guide dog, has a comfy spot under the counter and often comes out to greet customers.
