I'm a big fan of #pumpkin any time of the year and it's quite common in Thailand to find a lot of pumpkin in vegan dishes. Pumpkin #curry is always so yummy and filling. Comfort food at its healthiest. This was spiced nicely but I added some chili oil for heat. Not heavy or super creamy which is what I liked , it was kind of stew like. Yummy 😋
