These mushrooms fajitas are an updated version of the Hi! Fajitas I had last year. The lions mane mushroom is so meaty and such a nice focal point to this dish! There's also classic fajita bell peppers and onions. I love this big terra cotta dish that it's all served in. It also has guacamole, lettuce, house-made sour cream, and salsa verde. I really enjoyed the salsa verde. It wasn't really spicy, it was actually a bit sweet! These fajitas come with really nice, toasted tortillas. They're warm and slightly crisped to perfection. I loaded them up with all the delicious fillings. You can request gluten free tortillas as well.
