Legume pasta is such a good trick for adding more protein to your diet. I've mentored new vegans and those that are plant-bases-curious through Challenge22 for a few years now and this is one of my favorite tips for making meals more filling.
This chickpea rotini does a great job. It's texture isn't too far off semolina flour pasta, but you can still tell it's not traditional. With gluten free pasta I find they're easy to under- and overcook, so getting in that Goldilocks boiling time can be tough. Last night we made a wonderful "Hamburger Helper" style pasta dish. Hamburger Helper was a favorite of mine as a kid, so I was very happy to find this wholesome recipe! It was so amazing and great comfort food!
