Koya-dofu also known as Shimi-dofu, Kori-dofu, or Koyasan-dofu is basically frozen-dried tofu, an important ingredient in Buddhist vegetarian cookery. It is made of soy, coagulants, and baking soda. it looks like a hard sponge and needs to be soaked before use.It is mainly used in stews and soups.
Sooo I used this for making a simple vegan soup with a lot of algae and I also used vegan chicken soup dashi. It turned really good and can’t wait to try new recipe.
