The last book I read for 2023 was Crying in H Mart by Michelle Zauner. So much of the book was describing Korean food. It definitely makes me want to explore my Korean Vegan cookbook more. At the end of the memoir, she takes the time to make her own kimchi. It has been a while since I've had kimchi, so seeing it listed as a starter at Tori, I just had to get it.
A generous bowl of kimchi was a nice way to start our meal. This tangy and spicy fermented cabbage really zapped my taste buds awake! It seems like this is made in-house. I love how fresh this tastes and you can almost feel it doing good things for your stomach as you eat it. It's great to find vegan kimchi in a non-vegan restaurant!
