This cashew cheese spinach is such a great thing to have on hand! The filling is creamy and isn't bland like I've found other raviolis to be. I let the flavor shine through by making a simple topping with olive oil, cooked San marzano tomatoes, basil, @violife parmesan, salt, and pepper. This was a super quick yet satisfying and elegant meal.
