Fried Oyster Mushroom & Waffles

I have always balked at omnis chowing down on their syrupy waffles & fried chicken. I have too many questions filling my head like - How?! And Why?!? And - What happened to your tastebuds that you need all these incongruous flavours!?! Today I not only ate this dish I also ate humble pie - because it was DIVINE!
The lavender maple syrup was stunning & the mushrooms done to perfection - chewy, flavourful and so exciting to get a taste of the South while in NYC.
