This sandwich is another beauty from Guevara's. It has king trumpet mushroom 'bacon', avocado, mung bean frittata, smoked provolone, refried black beans, purple cabbage slaw, heirloom tomato, cherry peppers, and mole mayo in a whole wheat kaiser roll. The mung bean egg is so soft and just melts right in your mouth. The king trumpet mushroom bacon is until anything I've had before. When I first found it in my sandwich I was confused because it seemed a big woody, but I didn't enjoy it although it didn't have much of a strong flavor. Again, it feels like there's just a bit too much cabbage, but I really liked everything else and this sandwich is a great way to fuel your day!
