This sandwich looks a bit different than past breakfast sandwiches reviewed here. The swapped the grilled tofu for a very eggy tofu scramble. This is probably the eggiesr tofu scramble I've ever had! It was quite the mess to eat, but @jonok and I managed. The tempeh was amazing as always and the veggies tasted fresh. The cheese sauce wasn't as flavorful as I was hoping, but I like the idea. The sweet potatoes served alongside this sandwich were so yummy too!
