I had been looking for this pasta shape for ages without knowing the name of what I was looking for. I happened to spot this at Nations in Mississauga a while back and was so excited to try it. I had been using Taiwanese pulled noodles for a similar shape and texture in other noodle dishes, and I wanted a similar vibe for pasta dishes. These were a fun change but it's very easy to make too much given their size and shape. Like, 8 noodles is probably a serving haha. I'll probably break these in half next time and maybe try making a lasagne soup.
