I use Bob's Red Mill chickpea flour in a lot of different recipes. I add it to vital wheat gluten to make the seitan a bit more tender, and we love to make farinata or socca. I particularly like it as an egg substitute for dishes like omelettes and as a quiche filling.
For this spinach and vegan feta quiche, I used a combination of chickpea flour with some silken tofu to get a perfectly creamy, custardy filling.
