I saw a recipe on Minimalist Baker and decided to try a knock off of it. I subbed a few things according to my preferences but OMG it came out great! I have made many lentil stews and many vegan shepherds pie type dishes but the shallots and mushrooms really went great with the lentils. High in fiber and protein too! Plus mashed potatoes make everything yummier.
