Nothing gets me excited about a salad like arugula! I love the peppery, slightly bitter flavor and delicate crispness of these baby greens. My favorite easy salad to make lately has been arugula with pumpkin seeds and sliced apples, dressed with a splash of balsamic. It’s also equally delicious in sandwiches or with pasta. In my humble opinion, arugula is absolutely sensational and deserves a lot more love than it’s currently getting!
