This sandwich looks beautiful. My problem with it was the giant slab of tofu. I’m newly appreciating tofu but I only like it toasted/fried and seasoned and this was straight out of the package. I had to take it off.

I'd've totally eaten that😉 I love tofu so much (TRULY surprised at just how much I've fallen in love with tofu after going vegan) I'll even munch on it raw, as I'm using it for whatever I am at the moment 😋😂
