I added this to my list of dishes to try while in LA and it was absolutely the bomb! Nothing better than perfectly seasoned scrambled tofu with all of my favorite veggies diced up and served with warm corn tortillas.
Here’s an interesting fact: rice and beans eaten together provide all 9 essential amino acids. Can you think of another vegan food combination that does that?
