Good revisit of Caponata in a lighter version (in the opulent traditional Sicilian recipe the aubergines are fried and then sauteed in a pan with peppers, potatoes, tomatoes, onions, and green olives) with an intense taste of vegetables (all organic), suitable for all palates.
