This dish is made with king oyster mushrooms as the meat sub and that is one of the main reasons I like going here. The Chicknun was served with a mushroom gravy, mac n cheese (potato and carrot based), and grilled veggies. I asked to sub the veggies for more mac n cheese (obviously not a health food vegan over here). The mushrooms were very crunchy, not greasy, and absorbed the sauce well without getting soggy. The gravy was full bodied, but not overpowering, so you could still taste everything else you were eating. The mac n cheese was great, and I appreciate that they have made this nut free option still thicken like its cashew-based counterpart. The crunchy tortilla topper was an odd choice, until you get to the end and you still have sauce left…I definitely used them to soak up the last bits of all the goodness.
