We really liked this pesto dish—zucchini noodles, spinach-basil pesto, cherry tomatoes, mushrooms, roasted red peppers, & “Tempeh Tantrum” tempeh. Part of the ‘Vegan Chef Challenge’ in the Twin Cities.
