I’m currently in the middle of a road trip across the U.S. from Michigan (my childhood home) to California (my new home), and it’s been so interesting to find vegan food in places you wouldn’t expect, like this Thai restaurant in Moab, Utah. Arches Thai had so, SO many vegan options — I had so much trouble choosing what to eat! But I finally settled on a veggie stir-fry with cashews and tofu in a sweet chili paste and it was AMAZING. The sauce went perfect with the dish. I also had mango sticky rice topped with coconut cream for dessert and it was SO delicious. Thai food is probably my favorite cuisine, and this was definitely the best Thai food I’ve had 😍. Needless to say, I was a very happy vegan!!
