This was exactly what I needed after a workout! A salad called workout, sounds cheeky but it was excellent. The cauliflower is spicy, quinoa is a little crunchy, I love how fresh corn is coming back from its hide, and the pumpkin and grilled zucchini is just what this salad needs. Some kale and beetroot finishes off this lovely dish.
