this was so refreshing, and fitting as the weather starts getting warmer! between the tofu and the generously-topped peanut dipping sauce, i was almost full on these before my entree even came out! definitely recommend sharing! i wanted to use the sriracha and/or chili oil they had out on the table and mixed that in with the peanut sauce, but that’s just personal preference.

this was delicious!!! i’d love to know what they make their meat substitutes from because every time i’ve come here it is so tasty, juicy and has the right bite to it. it’s not indistinguishable from beef, which i’m happy about personally but could be a downside for others. the veggies were also cooked just the right amount for my liking. and depending on who you are, this could be several meals, it is a really good portion of food for about $17. no notes!

What a refreshing appetizer! Thanh Luong does have outdoor seating, so this would be perfect if you're sitting out there on a hot day. I really loved the shredded tofu. It gives this appetizer more substance and a really nice slightly crunchy texture. This also has vermicelli noodles, lettuce, and herbs. It's served with a lovely vegan fish sauce with a little chili oil. This was such a nice light starter. Somehow this is my first time having pho! I've heard so much about this iconic soup, but it's been hard to find a vegan version in my area. There has to be vegan pho in Minneapolis, so maybe I haven't been looking hard enough. Traveling all the way out to Minnetonka for this giant bowl of soup was totally worth it! This pho has is made with a super flavorful vegan beef broth and is packed with vegan proteins. It had vegan beef, ham (I think Tofurky roast), chicken, and nice slabs of tofu. It also had mushrooms and lots of fragrant onion. Bean sprouts, jalapeno, lime, and mint were served on the side. I really loved this dish. It was so flavorful and absolutely packed with rice noodles and vegan meats. It's an amazing deal for $17! I've been meaning to trek out to Minnetonka to try this new all-vegetarian Vietnamese restaurant. I was volunteering at the Minnetonka farmers market and thought this was the perfect opportunity since I was in the area! I was so happy that @jonok came out to enjoy this meal with me too! This curry soup was so light yet still creamy. It is made with the classic coconut milk, but it also has the interesting addition of almond milk. This made it lighter and thinner than the curry noodle soups I've had in the past. This wasn't necessarily a negative though. Because this soup was thinner and lighter, it was wonderful on a hot day. This soup contains veggie chicken, onion, mushroom, taro, and sweet potato. The chicken had a nice soft but springy seitan texture and had a really great chick broth flavor. The rice noodles are served on the side with mint leaves, jalapeno, lime, and lettuce. This dish comes with so much food!
