This East African snack is fluffy, hollow on the inside to hold delicious fillings, and crisp on the outside. You can choose from three different fillings or have one of each, which is what I recommend, since they are all delicious. The choices are Beyond Beef and potatoes, matoke curry, a richly flavorful, warming, tangy curry with savory plantains, and sukuma wiki (“stretch the week” in Swahili) made with braised kale, tomatoes, Beyond Beef, and spices. These are topped with cilantro and served with a lemon wedge. They are fun and satisfying.
