This consisted of acorn squash risotto with roasted chestnuts, toasted pine nuts, and micro greens. This fabulous warm and comforting dish was rich and creamy with a pleasant chewiness from the slightly al dente rice grains. It is a special for Veganizer PDX’s World Vegan Month celebration and a portion of the proceeds will benefit will benefit The Pixie Project, a nonprofit animal adoption center and rescue that also offers low cost and free spay and neuter and veterinary services for houseless and low-income animal companion guardians.
