young green jackfruit

Recently, I’ve been in the throes of a minor obsession — creating vegan recipes based on traditional crab cakes, though instead, using jackfruit & hearts of palm — no harming of our sea creature friends or oceans needed. The most recent iteration, made with a handful of ingredients & just a little bit of time, was incredibly flavorful, with all the feels of crab cakes only better. (Having said that, I still feel like the recipe needs one more minor tweak, as the cakes needed a little more binding.) Served with shredded basil, a squeeze of lemon juice, vegan mayo & lettuce. & thank you @berryveganplanet - do you remember we were chit chatting awhile back about Yuzu? This jackfruit was easy to pull apart and rinse the brine flavor off. It was awesome as a crab substitute in my vegan rangoons, and I’m looking forward to using this in pulled “pork” sandwiches! 💲2.09 at 99 Ranch in San Diego #jackfruit #canned #sandiego #abillionturns3

I bought this from an Asian grocery store on the way home from athome (the furniture store). This fruit is delicious. I used it in a smoothie. This needs to be made available everywhere.

I made jackfruit potato cakes (swipe right for a finished dish pic) & they were fantastic. More experimenting with jackfruit will be happening in my kitchen, as it seems especially suited for making things like this.
