Just Like Parmesan Wedge

I've had the official Stardew Valley cookbook for a while now but I've never made anything from it. It is packed with animal products, but the recipes can be veganized if you have enough vegan cooking experience. @jonok brought home a monster eggplant that needed to get used up. I scoured my cookbooks for an eggplant parm recipe when I remembered that there's eggplant parm in Stardew! I made my own ricotta with MinnTofu soft tofu, and used Violife feta instead of goat cheese. This parm wedge holds up to the fancy stuff from Rebel Cheese! It's salty and funky and shreds well with a microplane for fancy plating. It worked really well in this recipe! My arm was sore after all the grating, but it was worth it! Purtroppo devo dire che, a differenza delle fette gusto affumicato della stessa marca, questo pseudo parmigiano da grattugiare proprio non mi è piaciuto per nulla. Modifica moltissimo il sapore del piatto senza aggiungerne il sapore di formaggio. In Italia si chiama “gran prosociano” che non so proprio cosa voglia dire e all’estero “like parmisan” Comunque è un no 👎🏼

I LOVE cheese, and this parm wedge grates, slices, and tastes like a full bodied aged Parmesan! Great on mezzo platters with wine!
