This shelled #edamame from #traderjoes is a quick and convenient #vegan staple. 😊 It only requires a few minutes of being microwaved or boiled and then it’s good to go. 👍 Not to mention, edamame is a great #plantbased source of #protein, #fiber, #iron, and #vitamink. 🌱 The only unfortunate thing is the plastic film, but thankfully I’m fairly certain it is #recyclable. ♻️ In the picture is a dish we made with the edamame, some #tofu, and other assorted #vegetables, such as #carrots 🥕 and #celery. The texture of the edamame is pretty nice, and it pairs well with the different vegetables. I usually prefer the ones in the shells but these are convenient to dump in veggie stir fry or soup for added texture and protein.
I recall that TJs sold fresh, thawed edamame like this several years ago and then discontinued it. I was surprised to see it back in the fresh/salad section recently. In the past it was in a plastic recyclable carton and now it is in a sealed plastic, non-recyclable bag. I’m not sure if I just got a weird batch but the beans were a little slimy/filmy and I don’t remember them being like that previously. (The date was fine). I like the convenience of the thawed ones but I think I’ll stick to their frozen and just thaw as I need as that’s more cost effective (and not slimy).
