tsukemen

Always been curious what a tsukemen tastes like. Very happy to have finally gotten my chance here. The soup is slightly spicy and garlicky, just how a tsukemen should be in my mind. It will also come with an egg, but you can just shoo that away like the proper vegan you are. The owner will also helpfully point that out and will ask you when you hand in the ticket.

The miso-based soup is rich and refreshing. It was similar to demi-glace sauce, so it felt like I was eating pasta. The noodles are thick, curly, whole-grain noodles that coat the soup well and have a satisfying texture. The portion was quite large and I was full. The salad that came with it also had kale in it and was delicious. 味噌ベースのつけ汁が濃厚でさっぱりしています。 デミグラスソースにも似ているので、パスタを食べている感じもしました。 麺は全粒粉の太麺の縮れ麺で、汁に良く絡み、食べごたえがあります。 かなり量も多く、お腹いっぱい。 付け合せのサラダもケールが入っていて美味しかった。
