Tandoori hedgehog mushroom quesadillas

Ermagawd Yum. This dish hit all my cravings for a delicious fusion quesadilla. The vegan cheese melted beautifully, the flavours and textures were explosive and I was full and very satisfied afterwards. Would definitely recommend trying this dish.
