Sun Dried Tomato Quesadilla

Tasty quesadillas, definitely not your traditional gooey, cheesy quesadillas but still good and very healthy!

Vegan AND gluten free this quesadilla was divine. Good crunch on the tortilla and a good portion of yummy filling with sides of mango pineapple salsa and coconut sour cream. Great portion size for the price and really delicious!
