Roast veg quinoa salad

What makes this dish great is the chimichurri - it was super nice. The portion is huge, and the vegetables are roasted to perfection. #veganisnotscary

This was so flavorful and fresh. You get a massive portion so I had it for dinner too. Would recommend to share it. 10/10
